Mango Kulfi is a traditional, rich and creamy frozen dessert from India, kulfi is denser and creamier than Ice cream as they are made purely with reduced milk, cream , saffron and dryfruits. In this recipe I have added mango pulp. Mango Kulfi is one of my favourite desserts created using mangoes.

Ingredients

30 minutes, freezing time 8 hours
serves 4 - 5 सर्विंग
  1. 1litre full cream milk
  2. 2mangoes medium size
  3. 10-12saffron strands soaked in 2 table spoon milk
  4. 1table spoon corn flour
  5. Sugar as per taste
  6. 3/4tea spoon cardamom powder
  7. 1/4cup pistachio, cashew nuts and Almonds finely chopped
  8. Cream 1/2 cup

Cooking Instructions

30 minutes, freezing time 8 hours

    Take a heavy bottomed pan, bring milk to boil and reduce it to half, mix corn flour in little cold milk and add it to reduced milk.this batter will thick enough for kulfi. Put off the gas and let it be cooled.

    Mean while peel mangoes and chop them into cubes, put in a blender jar and blend smoothly and add it in completely cooled thick milk.

    Mix well until smooth (you can use a whisk) add cardamom powder, cream, dryfruits. Now transfer kulfi mix to kulfi moulds, close the lids, freeze it overnight or for 8 hours.

    Tasty mango Kulfi is ready to serve, take the moulds out of the freezer and prise the kulfi out with the help of a knife, garnish with nuts and serve immediately.
