Butternut Squash is a great one to enjoy on any given day. This beautiful looking Veggie is absolutely wholesome and healthy. Though a number of recipes can be made with this, I always prefer this delicious Soup a lot.
Super tempting and very delicious. The best part is that this gets done in no time at all.
Also known as Butternut Pumpkin, it has sweet, nutty taste similar to that of a Pumpkin. It's high in antioxidants, Vitamins A and C, Potassium, Manganese and Fibre. The loveliest thing is that it taste great both in savoury and sweet dishes made out of them. And just because it's versatile, it is used extensively in cooking by many. Simple recipes made out of it tastes super yum and looks so tempting as well.
Therefore it's a popular variety of Squash with a light Yellow colour from outside and a bright Orange colour from the inside with a very few seeds.
It's basically a Vine and available aplenty in Winters, Autumn and even in Summers for a short while and because it'such a versatile one, this time I prepared a Soup. With just Chicken stock added, this Soup is to die for.

Cooking Instructions

Wash and peel the skin of butternut squash. Dice into cubes. Meanwhile heat a tablepoon of butter in a pan. Add chopped garlic and onion. Saute until the raw smell fades away and it's translucent preferably on a low heat.

Now in goes the cubed butternut. Cover and cook for 2-3 minutes. Now is the time to add the stock. Cover and cook for the next 12 minutes or until the butternut squash is cooked well.

Adjust salt and pepper. Let it cool down a bit before blending to a smooth puree. For serving suggestions, don't forget to garnish it with a sprig of coriander.

Also drizzle some fresh cream if desired. Serve it piping hot to your loved ones. Enjoy!
