Cod with Tomato!! 🐟🍅

This recipe is very well-known in Spain during Easter since on Good Friday you cannot eat meat (for those who are Christians, and in Spain I’d say that almost 80% of Spaniards are) so fish is a great alternative for that day!!!
This recipe is very easy to make and it turns out delicious! And if you like bread, dipping it in its tomato sauce… Mmmmmm!! Delicious, delicious!

Cooking Instructions

Cut the cod loins into small pieces to fry them.

Put flour on a plate to coat the cod pieces. Add salt and coat the pieces with flour.

Heat enough oil in a pan to almost cover the cod. Once hot, fry the cod. When golden on both sides, remove and place on a paper towel-lined plate to absorb the excess oil.

Prepare the sofrito (sautéed base). You can use the same pan if everything fits. Remove most of the oil, leaving a bit for sautéing.

Peel and chop the onion, then add it to the pan. (If you’re using fresh piquillo or red peppers, cook them first, as they take longer to soften.)

Add the garlic, chopped into small pieces or slices. Let it cook along with the onion.

Chop the roasted piquillo peppers into small pieces and add them to the onion and garlic. (I use jarred roasted piquillo peppers, since fresh ones are hard to find here in the US. Piquillo peppers are originally from Spain, and the only ones I’ve been able to find are ‘DELALLO Roasted Piquillo Peppers in Water.’)

Add the strained tomatoes and let everything simmer together to blend the flavors.

Add parsley and taste for salt!

Add the fried cod pieces to the sauce. Let it simmer a bit more so everything melds together—make sure it doesn’t stick!
