Ingredients

10-15 people
  1. 3raw mangoes
  2. 1big onion
  3. 7green chillies
  4. 1 tbspred chilli Powder
  5. 1 tspturmeric powder
  6. 1 tspdry mango powder
  7. 1 tspblack salt
  8. 1 tspsalt
  9. 1 tbspfennel seeds
  10. 1 tbspcumin seeds
  11. 1 tspnigella seeds
  12. 1 tspmustard seeds
  13. 1/4 cupmustard oil
  14. 1charcoal to give smoke effect

    Take raw mangoes which are hard and fresh. Now wash it and pat dry the water similarly peel the onion wash it and pat dry it likewise do with the green chillies. Now peel the mangoes and slice them in a slicer or food processor so that it is of same size. Once all the mangoes are sliced throwaway it's seed and cut them longitudinally just like juliennes. Don't make thin juliennes make it slightly thick. Now cut the onion also longitudinally in thick slices and open all the layers of the onions.

    Cut the green chillies also in thick roundles. Once done transfer all of them to a big bowl. Then add the powdered spices to it. Both the salt, red chilli, amchur and turmeric powder. Now in a mixer grinder or mortar add the whole spices fennel seeds, cumin seeds, nigella seeds, mustard seeds and crush them. Make a coarse powder don't make smooth powder of it. Then in a pan heat the mustard oil till smoke point once the smoke starts to come off the flame and allow the oil to cool a bit.

    Cool it for a minute then add the crushed spices to it and leave it for 2 minutes then add that tempering along with the oil to the mango, onion and green chilli mixture and mix it well with a spoon earlier to avoid burning the hands. Later after 2-3 minutes mix it by your hands so that all the spices mix well. The achaar or kachri is ready but to take it to a next level smoke a charcoal red hot place it on an aluminum foil then add two drops of oil to it as it start to smoke.

    Immediately put the glass jar on it in which you will transfer your kachri or pickle. Once the jar is filled with smoke invert it and Immediately put the kachri or pickle in it and close the lid. Put it in the refrigerator and it will go well for 8-10 days. Enjoy it with roti, poori, paratha, daal chawal or anything of your choice. Make it and enjoy it with your loved ones. Happy Cooking 🥰
