Palmier cookies

My friends from Spain originally taught me this recipe when I was about 9- I still make it to this day!

Ingredients

  1. for the cookies
  2. 1 packagespuff pastry
  3. 6 tbspground cinnamon (or more if you like!)
  4. 2 cupgranulated sugar

Cooking Instructions

    Preheat oven to 400°F

  2. 2

    Mix together cinnamon and sugar in a medium bowl

  3. 3

    Sprinkle a bit of the cinnamon sugar onto your work surface

  4. 4

    Take puff pastry out of the freezer

  5. 5

    Roll puff pastry with roller until its about1/8 of an inch thick.

  6. 6

    Sprinkle the pastry with most of the remaining cinnamon sugar (save a little!)

    Take one long end of the pastry and roll it onto itself until you reach the middle of the pastry (like you're rolling a jelly roll)

    Roll the other end until the two meet

  9. 9

    Cut the rolled pastry into 1/2 inch segments (so they look kind of like handlebar moustaches)

    Roll the segments in the remaining cinnamon sugar

  11. 11

    Place on a cookie sheet, with enough room for them to expand

  12. 12

    Bake for 6-10 minutes

    Allow to cool and enjoy!:)
