Simple Dutch Oven Roasted Chicken and Vegetables!

作り方

Preheat an oven to 300°F

Rinse the chicken inside&out and pat dry with paper towels.

Place the chicken in Dutch oven. I use Le Creuset oval 5 QT.

Rub the chicken all over with the olive oil.

Sprinkle pepper on both sides of the chicken.

Put some garlic, ginger, rosemary, thyme in the cavity.

Stuff it with some vegetables in the cavity as well.

Place the remaining vegetables around the chicken.

Put the lid on and place the chicken in the oven for 3 hours

These is a lot of tasty broth at the bottom of Dutch oven!

Please use a high quality pasture-raised whole chicken.

Otherwise, it won't get much of the broth from the chicken,

and damage your Dutch oven. If you're not sure about it,

use extra virgin olive oil, and

thoroughly coat all surfaces of the Dutch oven :)

You can use any vegetables you like,

onions and mushrooms are usually my favorite!

Please use a high quality pasture-raised whole chicken. If you'd like you can add a little bit of salt and/or lemon!
