材料

3-4 servings
  1. spaghetti 360g
  2. kosher salt for pasta water (1-1.5%)
  3. mushroom (your choice of oyster, trumpet, shiitake and etc). 400g
  4. garlic (finely minced) 3 cloves
  5. extra virgin olive oil 1/4 cup
  6. crushed red pepper 1/4 teaspoon
  7. white wine 1/2 cup
  8. kosher salt one generous pinch + more to taste
  9. fish sauce 2 tablespoons
  10. fresh Italian parsley (chopped) 1/3 cup
  11. Pecorino Romano (grated) as desired
  12. truffle oil (optional) for drizzling

作り方

    Prepare all the ingredients.

    Oil in a large pan over medium low heat, add mushrooms.

  3. 3

    Add a pinch of salt and cook until the mushroom gets wilted.

  4. 4

    Add garlic and cook 30 sec, stir in pepper and white wine.

  5. 5

    Adjust heat to medium high and bring to a simmer. Add sauce.

    Lower the heat and taste. Season with salt as needed.

    Bring to a boil in a large pot of water. Add pasta and cook.

    Reduce pasta cooking time by 1min so we FINISH it in the PAN

    Add pasta/ parsley, toss well until sauce is coated evenly.

    Grate cheese over the pasta, and drizzle it with some oil.

    Serve :-)

To get Umami and a meaty texture from the mushrooms, sauté slowly to enhance the best part of it!
