材料

2 servings
  1. for the omelette:
  2. eggs (beaten) 4 large
  3. fine sea salt 1/8 teaspoon
  4. crab meat (drained and flaked) 1 can (75g)
  5. scallions (angled) 1-2 (1/3 cup)
  6. sake 1 tablespoon
  7. canola oil 2 tablespoons (divided)
  8. for the sweet and sour sauce:
  9. water 1 cup
  10. chicken bouillon powder 1 teaspoon
  11. Chinese light soy sauce 1 tablespoon
  12. sake 1 tablespoon
  13. oyster sauce 2 teaspoons
  14. cane sugar 1 tablespoon
  15. rice vinegar 1/2 tablespoon
  16. ground white pepper 1/8 teaspoon
  17. potato starch 1 tablespoon
  18. water 1 tablespoon
  19. toasted sesame oil 1 teaspoon
  20. scallions (thinly sliced) for garnish

作り方

    Gather all the ingredients.

    Combine all the sauce ingredients in a saucepan. Mix well.

  3. 3

    Heat to medium and bring it to a boil.

    Combine potato starch and water, then mix well.

  5. 5

    Slowly add the mixture to the sauce mix while mixing.

    Cook until the sauce thickens. Remove from the heat.

    Add sesame oil and mix well.

    Add eggs and salt into a small bowl.

    To gently mix the egg, use chopsticks in a zig-zag motion →

    to cut off the egg whites. Do not over mix.

    Add crab meat, scallions and sake. Mix until combined.

    NOTE: To serve immediately, prepare two serving plates. →

    Wash the rice bowl by coating it with water, and dry it. →

    Fill a rice bowl with rice and press on the rice gently. →

    Upturn the rice onto a plate to make a mound of rice.

    Oil in a small nonstick pan over medium heat.

    Pour half of the egg mixture. Let it cook for a few secs.

    Use a spoon or chopsticks to mix in a circular motion.

    Once the surface of the omelette is set, remove from heat.

    Slide the omelette over the rice.

    Pour one portion of the sauce over the omelette. Repeat once

  22. 22

    Serve.

コツ・ポイント

Adjust to the right amount of sweetness/acidity for the sauce. Add sesame oil for an aroma.
