Okra Marinade
Simple ingredients with simple preparation, but this savory side will make you want some more!

Transfer the okra to a colander and drain well.

Place the okra to a shallow glass baking dish.

Combine all the marinade ingredients in a small bowl.

Pour the marinade over the okra and add shallots to it.

Leave it at room temp until the okra gets cool.

Cover and chill for at least 30 minutes before serving.

NOTE: Rotate the okra half way to evenly coat with marinade.

I use Sichuan chili bean sauce for a kick, but you're free to swap that with regular chili bean sauce for a milder kick.
