Spanish rice, also known as arroz rojo in Spanish, is a Mexican dish cooked with onions, garlic, tomato and other ingredients. If you cook simple rice by itself, it's a perfect side dish for tacos or enchiladas, but if you add some protein it can be a main dish and you can make it in one pot :-)

材料

4-6 servings
  1. ground beef/bison 1/2 lb
  2. yellow/sweet onion (chopped) 1 medium
  3. green pepper (chopped) 1 medium
  4. garlic (minced) 2 cloves
  5. canola oil 2. tablespoons
  6. ground cumin 1 teaspoon
  7. chili powder 2 teaspoon
  8. tomato paste 1 tablespoon
  9. uncooked long grain rice 1 cup (rinsed)
  10. diced tomato 1 can (14 oz/drained)
  11. tomato sauce 1 can (8 oz)
  12. water 2 cups
  13. better than bouillon beef base 2 teaspoons
  14. kosher salt 1/2 or more to taste
  15. frozen corn 1/2 cup
  16. kidney/black bean  can 1 can (drained and rinsed)
  17. Mexican blend shredded cheese 1 cup or more to taste

作り方

    Oil in a Dutch oven (3.5 qt) over medium heat.

    Add beef, break it up and cook until meat gets brown.

    Add onion/pepper/garlic/cumin/chili powder/tomato paste.

    Cook and stir until the veggies are get tender.

    Stir in rice/diced tomato/tomato sauce/water/bouillon/salt.

    Bring to a boil, and reduce the heat to a gentle simmer.

    Cover and cook for 20-25 mins or until the rice is cooked.

    Turn of the heat, uncover and season with salt as needed.

    Stir in corn/beans and sprinkle the cheese over the rice.

    Cover and leave for 5 mins to warm it up.

    Serve.

コツ・ポイント

For authentic Spanish rice, I use long-grain white rice. It's fluffy, less sticky, and absorbs the broth well.
