Spanish Rice with GB

Spanish rice, also known as arroz rojo in Spanish, is a Mexican dish cooked with onions, garlic, tomato and other ingredients. If you cook simple rice by itself, it's a perfect side dish for tacos or enchiladas, but if you add some protein it can be a main dish and you can make it in one pot :-)

Oil in a Dutch oven (3.5 qt) over medium heat.

Add beef, break it up and cook until meat gets brown.

Add onion/pepper/garlic/cumin/chili powder/tomato paste.

Cook and stir until the veggies are get tender.

Stir in rice/diced tomato/tomato sauce/water/bouillon/salt.

Bring to a boil, and reduce the heat to a gentle simmer.

Cover and cook for 20-25 mins or until the rice is cooked.

NOTE: Stir occasionally to prevent burning at→

the bottom of the pot.

Turn of the heat, uncover and season with salt as needed.

Stir in corn/beans and sprinkle the cheese over the rice.

Cover and leave for 5 mins to warm it up.

Serve.
コツ・ポイント
For authentic Spanish rice, I use long-grain white rice. It's fluffy, less sticky, and absorbs the broth well.
