材料

2-3 servings
  1. fresh center cut sushi grade salmon 300 g
  2. fine sea salt
  3. paper towel
  4. for the sauce:
  5. avocado oil 3 tablespoons
  6. toasted sesame oil 2 teaspoons
  7. garlic (minced) 2 cloves
  8. crushed red pepper 1/8 teaspoon
  9. tamari soy sauce 2 tablespoons
  10. lemon juice 1 tablespoon
  11. toasted sesame seeds 2 teaspoons
  12. baby arugula (optional)

作り方

  1. 1

    Use a paper towel to wipe off the excess moisture.

    Lightly sprinkle the salt over the tray.

  3. 3

    Place the salmon and lightly sprinkle the salt over it.

    Cover with a plastic wrap. Keep in the fridge for 20 mins.

    Uncover and use a paper towel to remove excess moisture.

    NOTE: this is a typical Japanese sushi chef's technique →

    to not only remove the odor, but induce umami from the fish!

    Use a SHARP knife to slice the salmon into 1/4" thick pcs.

    Place the arugula on a heat safe plate.

  10. 10

    Place the salmon on top of the arugula.

    Heat avocado/sesame oil in a small skillet over medium low.

  12. 12

    Add garlic/pepper and cook until the garlic is golden.

  13. 13

    Drizzle the oil over the salmon.

  14. 14

    Drizzle soy sauce and lemon juice over the salmon.

  15. 15

    Sprinkle the sesame seeds over the salmon. Serve.

コツ・ポイント

The Japanese cooking technique "shiojime" helps to remove the fish odor and makes a nice texture, and create umami!
