It's my mother's recipe that has been a favorite in our family since when I was living at home. Now it is something I make everytime I visit home. The plate's emptied instantly even if I make double the amount.

It's much easier to make with firm tofu, but soft tofu can also be used f you completely drain out the excess water. The hamburg steak is very delicate and can break easily, so try not to touch it until it is thoroughly cooked☆There is no need to handle the hamburg steak except when turning it over. Only need to shake the pan once in a while. Excess water will drain out of the steak while cooking, so let it evaporate, and you are finished once the water is all drained out. Even if you use the volume of the ingredients on this recipe as a rough indication, it will relatively turn out well. It's very tasty when you add plenty of negi, sesame, and ginger. Recipe by ne-ne

Ingredients

4 servings
  1. 1 blockFirm tofu
  2. 250 gramsGround meat
  3. 2/3 stalkfinely chopped Japanese scallions (green onions) or welsh onions
  4. 1 tspeach, finely chopped or grated Garlic, ginger
  5. 2 tbspGround sesame seeds
  6. 1 tbspSoy sauce
  7. 1 tbspSesame oil
  8. 1 pinchSalt and pepper

Cooking Instructions

    Add all ingredients in a bowl, mix into gruel, and shape to your preference.

    Heat the frying pan, and cook in medium to high heat with a little sesame oil (not listed in the ingredients). Cook both sides thoroughly while extracting water from the steak, and you are finished.

    Instead of pouring sauce over the entire steak, have a few sauces in separate plates and enjoy each bite with a different sauce. I personally prefer and recommend soy sauce with mustard and vinegar, or soy sauce with shichimi spice and vinegar. You can also try other sauces such as ponzu or soy sauce with lemon.
