All-Purpose Spinach Paste

I wanted to make spinach curry, but I blended it too much and it became a paste. This sauce is vegetarian.

If you're not vegetarian or on a restricted sugar diet, then switch the vegetable bouillon to chicken stock granules. Using soy milk instead of water will make this sauce richer. Recipe by matsno

Ingredients

6 servings
  1. 1 1/2bunches Spinach
  2. 1/2 canWhole canned tomatoes
  3. 1Onion
  4. 2stalks Celery
  5. 2pieces Ginger
  6. 1 dashSalt
  7. 1 tspVegetable oil
  8. 1/2 tspVegetable bouillon granules
  9. 1 pinchSugar
  10. 200 mlWater (soy milk)

Cooking Instructions

  1. 1

    Mince the onion, celery, and ginger. Microwave the onion for 5 minutes. After the onion has heated, sauté all the vegetables in olive oil.

    Boil the spinach and then roughly chop into pieces.

    Add the water (or soy milk), tomato, spinach, and cooked onion, in that order, to a blender and blend until a paste is formed. Use a blender if possible.

    Return everything to a pot and add the salt and sugar. Simmer for just a short time and it's all done.

    Serve with brown rice and garnish with some extra cooked onion and celery.
