Someone wanted to eat this 😁. This is an easy recipe and method. If you don't have eggplant, you can skip it. Just add whatever vegetables you like.
Cooking Instructions

Pour the coconut milk into a pot or pan and bring to a boil. Add the Panang curry paste.

Stir until the coconut milk and curry paste are well combined and the coconut milk starts to release oil. Add the pork and stir-fry briefly to combine.

Wait until the pork is cooked through. Add the palm sugar, fish sauce, and salt. Stir well and taste. Once you get the flavor you like, add the kaffir lime leaves and stir again. You're done! The heat from the pork will cook the kaffir lime leaves. Enjoy!
