  1. 1.1 lbspork shoulder, thinly sliced into small pieces (about 500 grams)
  2. 1-2 cupswater (240-480 ml)
  3. 1 1/2 tablespoonspalm sugar
  4. 1 tablespoonfish sauce
  5. 1 pinchsalt
  6. 7 oz (200 grams)Panang curry paste or 1 packet ready-made Panang curry paste
  7. 1 cupcoconut milk (8.5 fl oz or 250 ml)
  8. leavesKaffir lime

    Pour the coconut milk into a pot or pan and bring to a boil. Add the Panang curry paste.

    Stir until the coconut milk and curry paste are well combined and the coconut milk starts to release oil. Add the pork and stir-fry briefly to combine.
