Ingredients

  1. 3Mini Cucumbers
  2. 1/2 tspSalt
  3. 1 tbspVinegar
  4. 1/2 tbspSoy Sauce
  5. 1/2 tbspSesame Oil
  6. 1/2 tbspSugar
  7. 2 ClovesGarlic, minced
  8. 1 tspChilli Flakes (adjust to taste)
  9. 1 tbspRoasted Sesame Seeds (optional)
  10. 1 tbspFresh Red Chilli Peppers, thinly sliced (optional)
  11. 1 tbspChilli Oil (optional)
  12. Slicethe cucumbers into thin rounds
  13. 1-2Scallions, thinly sliced (optional)

Cooking Instructions

30 minutes

    Slice the cucumbers into thin rounds.

    In a container, combine the cucumbers with salt, vinegar, soy sauce, sesame oil, sugar, garlic, chili flakes, and roasted sesame seeds. If using, add the fresh red chilli peppers and chilli oil. Seal and shake gently until well mixed.

    I'm sharing another pickled cucumber recipe, which is also easy and quick to make. As long as you have all the ingredients at home, you can prepare this dish in half an hour. You can serve this dish after marinating it for 30 minutes, but the longer you marinate it, the more flavorful it'll get. Make sure you keep the pickled cucumber in the refrigerator. And I recommend finishing it within 5 days. This pickled cucumber can be served as an appetizer or a side with any meaty or hearty dish.     I was looking for something to go with a steak dish I was trying, called Japanese Steak Rice Bowl. (Japanese Style Steak Rice Bowl https://cookpad.wasmer.app/us/recipes/4643016-japanese-style-steak-rice-bowl ) This Korean cucumber salad looked like it might fit the bill. It was perfect, really added a nice offset to the slightly sweet sauce on the steak. Now to be fair, I'm not a huge fan of cucumbers, it's a take or leave it kind of thing. But I tell you what, this thinly sliced English cucumber, in this light pickle was perfection. I used a medium hot red pepper powder, and it was not spicy. The flavors were fresh and just happen to be perfect with the steak. Without the lime juice, it had a very slight acidic taste, if you want it a tad more, use the lime/lemon juice also.
