I've seen many egg/Avocado salad combos and have tried a couple. They were good but a little bland. I added a smoky cumin(I love cumin!!) and a little cayenne for kick! Its so good!! Feel free to double, triple whatever...this was an experiment so I only used two eggs.

This is what I love to make out of any leftovers, from my smoked chicken recipe. I prefer the white meat. I think it has a better texture. I will also use the dark meat as well. I'm not that picky.

I love deviled eggs, and I like egg salad though I think the flavor is often ruined by adding huge chunks of celery and way too much sweet relish. I've adapted my own deviled egg recipe into salad form, and it is now what I personally prefer as an egg salad. Serve on crackers for a little textural crunch.

Came up with this on the spot, I don't like a lot of what goes into traditional potato salad. And it has the benefit of not being over dressed like store bought.
