Ingredients

  1. 400 gFillet of beef
  2. 50 gButter or oil
  3. to tasteSalt,pepper
  4. 25 gShallots finely chopped
  5. Lemon juice
  6. 125 mlDry white wine
  7. 125 mlCream
  8. Parsley chopped

Cooking Instructions

    Cut the meat into strips

  2. 2

    Place the oil in a saute pan over a fierce heat

  3. 3

    Add the beef strips,lightly season with salt and pepper,and allow to cook rapidly for a few seconds.the beef should be brown but under done

  4. 4

    Drain the beef into a colander.pour the oil back into the pan

  5. 5

    Add the shallots,cover with a lid and allow to cook gently until tender

  6. 6

    Drain off the fat,add the wine and reduce to one third

  7. 7

    Add the cream

  8. 8

    Add the lemon juice and beef strips do not reboil..correct the seasoning

  9. 9

    Serve sprinkled with chopped parsley
