Cut the meat into strips

Place the oil in a saute pan over a fierce heat

Add the beef strips,lightly season with salt and pepper,and allow to cook rapidly for a few seconds.the beef should be brown but under done

Drain the beef into a colander.pour the oil back into the pan

Add the shallots,cover with a lid and allow to cook gently until tender

Drain off the fat,add the wine and reduce to one third
- 7
Add the cream
- 8
Add the lemon juice and beef strips do not reboil..correct the seasoning
- 9
Serve sprinkled with chopped parsley

My mother used to make this for me for ages. To me, beef stroganoff meant this dish. My father and husband both love it, and request it quite often.You can use king oyster mushrooms instead of shiitake mushrooms. Actually, I used the former in the version in the photo, since they're inexpensive.Don't use expensive marbled beef, or it will be way too fatty!
