Ingredients

10 servings
  1. 350 gAll purpose flour
  2. 1.5 tspBaking powder
  3. 1.5 tspCinamon powder
  4. 200 gSugar
  5. 3Eggs
  6. 1/2 tspVanilla essence
  7. 230 mlMala
  8. 250 gGrated carrots
  9. 100 gSoaked Bakers mix
  10. 250 mlCooking oil
  11. 2Banana (very ripe)

Cooking Instructions

    Pre heat oven at 180°c for 15 minutes and grease and flour 8 inch baking tin and put aside

    Measure all ingredients as per the recipe and mash the bananas into puree

  3. 3

    In a bowl beat and whisk the eggs and add sugar as you continue whisking. Add the oil and whisk till well incorporated. Add the vanilla essence into the mixture and whisk then pour in the milk and continue whisking.

    Sieve the flour, baking powder and cinamon onto the wet mixture and whisk till it's well blended and then add the banana puree

    Fold in the grated carrots and the well soaked bakers mix.

  6. 6

    Pour into the greased tin and into the pre heat oven.

    Bake at 180°c and check after 40mins with a dry toothpick. If well done the toothpick comes out clean

  8. 8

    Remove from the oven and wait for about five minutes then remove from the baking tin onto a wire rack for cooling. I love this with cream cheese and whipping cream or custard
