Stir-fry Beef with Spring Onions & Ginger

My husband and I have always love the Soo Kee's Son restaurant in the heart of Kuala Lumpur, Malaysia. We can whack a whole large portion of their stir-fry beef with spring onions and ginger. I am still trying to achieve the softness of the beef, other than that, it is flavourful to go with rice.

Proper method to marinate the beef:
First put in the dark soy sauce, and pinch of salt & white pepper, mix evenly; then put in egg white and mix evenly; then baking soda, mix evenly; then corn flour, mix evenly; lastly only add in the oil, mix well and put aside for 30 minutes. - 2
Heat wok and oil at high heat, then fry the beef for 10 seconds. Take out and put aside.

Lower heat to medium-low heat; add ginger into the wok, fry until fragrant; then garlic and spring onion (white part first, follow by green part) fry until fragrant. Add in beef and sauce, constantly fry and mix well in medium-high heat for just 15 seconds. Then serve hot with white rice.
