My husband and I have always love the Soo Kee's Son restaurant in the heart of Kuala Lumpur, Malaysia. We can whack a whole large portion of their stir-fry beef with spring onions and ginger. I am still trying to achieve the softness of the beef, other than that, it is flavourful to go with rice.

Stir-fry Beef with Spring Onions & Ginger

  1. 300 gramtenderloin beef, thinly sliced and pound a bit
  2. 10 slicesginger
  3. 4 clovesgarlic, sliced
  4. 1 bowlspring onions include the bottom white part, cut into 2-3 inches long
  5. Marinate beef for at least 30 minutes:
  6. 1 Tbspdark soy sauce
  7. 1egg white
  8. White pepper
  9. 1/2 Tspbaking soda
  10. 1 Tbspcorn starch
  11. 1 Tbspoil
  12. Sauce for stir-frying, mix well and prepare in a bowl:
  13. 1.5 Tbspsoy sauce
  14. 1 TbspShaoXing wine (chinese cooking wine)
  15. White pepper
  16. 1/2 Tspcornstarch

    Proper method to marinate the beef:
    First put in the dark soy sauce, and pinch of salt & white pepper, mix evenly; then put in egg white and mix evenly; then baking soda, mix evenly; then corn flour, mix evenly; lastly only add in the oil, mix well and put aside for 30 minutes.

    Heat wok and oil at high heat, then fry the beef for 10 seconds. Take out and put aside.

    Lower heat to medium-low heat; add ginger into the wok, fry until fragrant; then garlic and spring onion (white part first, follow by green part) fry until fragrant. Add in beef and sauce, constantly fry and mix well in medium-high heat for just 15 seconds. Then serve hot with white rice.
