Dalma(no Onion no garlic)
Cooking Instructions

Soak dal for 4-5 hour.
Wash the vegetables and cut all in medium dices of equal sizes.
In water, add dal, vegetables,salt and turmeric in a pressure cooker and cook for 1 whistle. - 2
Meanwhile prepare the dalma masala. Take saunf, jeera, dalchini, kali mirch and dried red chilies.
Dry roast the spices and let it cool for sometime. Later grind them all into a fine powder. - 3
Now in another pan prepare the tadka. Take Ghee and heat. Add panch-phoran and dried red-chilli and mix this tadka to the dal mixture.

Let it cook for 8-10 minutes. If you prefer little sweet,you can add sugar or can skip it.
Check the salt and adjust as per your taste. Once you get a medium consistency gravy, sprinkle the Dalma masala and switch off the flame. - 5
Mix it and cover with a lid and let it sit for 5 minute till the flavor infuse properly.
Garnish with shredded coconut and chopped coriander leaves.
