Peel and wash the Irish. Grate the tattashe and onion. Fry in the red oil put water, wash and cuts the liver in cube. Add warm water to the dry fish and wash add the liver and dry fish.

When boil add the Irish potatoes, maggi and spices. Allow to cook. Wash and slice the spring onion when the Irish potatoes is soft add the spring onion and mash. Enjoy😋😋😋

McHugh's Slow Cooker Irish Coddle
Every year for St. Patrick's Day, my wife and I will make an Irish dish or two. It usually ends up being different variations of Shepard's Pie, Bangers & Mash, and Corned Beef & Cabbage. I was always curious about making Coddle, but it seemed daunting. The family recipe that I had seemed like a lot of work, which deterred me. Over the past few months, I became curious about making the Coddle in the slow cooker. Finally, I decided to try it!What's not to love in a Coddle? It has Irish bacon & sausages, potatoes, carrots(at least in my family), and the optional onion. With a little bit of parsley and pepper, this is such a tasty treat. It will definitely be made again, and again, and again.This recipe calls for 4 to 5 cups of water. That all depends on what you want. If you want it to be more stew-like, then only use 4 cups. If you want it to be more soupy, then add 5 cups. It is totally up to you.This is the perfect dish for St. Patrick's Day or any day of the week. Old Fashioned Pub Pickled Onions
In the 1700's England had an explosion of documented, recorded, pickled preserving recipes. Pickled onions as far as I could find was a recipe which comes from, Sarah Harrison’s 1739 cookbook The House-Keeper’s Pocket-Book. The Jamaican pepper mentions was Jamaican allspice. I just chose the English pub pickled onions, because I love malt vinegar. The onions they use are not available and the pearl onions are a bit bigger then the small boiling onions. Plus the pearl onions are very expensive. So I am going to adapt this recipe with a common onion that's cheap here. They are bigger, but by the time I purchase enough pearl onions it would be well over $30.00 so Vidalia it will be.
