First mix the dressing with the mayonnaise the apple cider vinegar, the sugar and the seasonings. Set aside to marinate

Shred the cabbage and the onion and the carrots. Rinse the cabbage and carrots and drain if necessary.

Pour the dressing on to the cabbage and carrot mixture. Mix well. Let sit for a few hours and you have cabbage and carrot coleslaw.

Mexican Cabbage "Slaw"
This is inspired by a condiment/side that they serve at my favorite Mexican restaurant, El Molino Central, in Sonoma, CA.My version is super simple, fast, and great as an addition to tacos or as a base for a taco bowl type meal. I've made it with different kinds of cabbage, vinegar, and sometimes add special additions like slivered red onion or toasted pumpkin seeds.

This is how I make mine, but you can adjust any of the ingredients to your own taste preference.Make sure you make the dressing separately and it tastes right before you mix it in with your veggies.
