Make Chewy Bread with Mochi
We received a bunch of mochi for my daughters first birthday and I cut it up and then left it in the freezer for ages. To be honest, I don't really like mochi, but it's considered lucky so it didn't seem right to throw it away. Then I saw a recipe that involved kneading cooked rice into bread dough so I thought, maybe you can make bread with mochi too!?After heating and melting the mochi, add water back to the mix to bring it to 220 g. A lot of water is lost in the heating process.Every oven is different and has it's own quirks, so please adjust this recipe based on how you know your oven works. The information here is just how it works best in my oven. Recipe by Chibato

Mushroom Gratin Bread
While referring to Nao's recipe, I tried my hand at making this in my own way. This is my favorite gratin bread. I use a bread maker, and am so happy that it can knead. It turned out really good, so I decided to upload it this time. Please use your favorite bread dough. Please make the sauce a bit thick and rich. You're going to have a hard time in wrapping it in the dough if it is too soft.... When wrapping it in the dough, please make sure the rolls don't touch the others around it. The dough won't come apart, and the filling might come out. It is convenient to divide the filling up exactly among the number of bread dough pieces. You can extra dough, so please try making it by adding in your favorite fillings. Recipe by Maimama

Walnut Bread Kneaded in a Bread Machine
I aimed to recreate the walnut rolls from the Little Mermaid Bakeries (a chain of bakeries in Japan). If your bread machine chops the walnuts up too finely, add the walnuts 5 to 10 minutes later, or instead of adding them to the bread machine, knead some chopped walnuts into the dough when you form the rolls. The ratio of whole wheat to bread flour is as follows: For a tender crumb, use 100 g whole wheat and 140 g bread flour; for a sturdier, denser crumb use 140 g whole wheat to 100 g bread flour. Please adjust between those ranges to your taste. For 12 rolls. Recipe by Kokubocchi

Milk Bread
This is the milk bread sold in Asian stores. It is soft like commercial bread, but sweet and milky. Perfect for sandwiches, toast, etc.You know how some bakers say, you can't make bread stressed out? It's true. When making your dough, you cannot stress about time. Knead as much as you can until you hit the right consistency. Watch a movie when letting the dough rise. Go out for your walk when you are proofing. Pay attention to the smell and peek in the oven to see how it looks instead of letting the timer run out.

Cinnamon Raisin Bread
Have I mentioned I’ve tried to make yeast bread over the last 35 years and failed miserably? Well, I have. I’ve followed recipes down to a T. Failure! I’m thinking I’m making it harder than it has to be. I know there’s a lot of ‘feel’ to it. I introduced my grandson to cinnamon raisin bread and the smell alone, from the toaster, was all it took to sell him hard. It’s expensive stuff right now!! 5 bucks a loaf? And the loaves are dinky. Delicious, but dinky. I went in WITHOUT a recipe except my own little quick hot roll recipe, and made 2 loaves for Pennie’s, literally. I even used whole wheat flour and golden raisins. It can be made with either flour. I like the fiber in whole wheat.

Natsumikan Citrus and Marmalade Bread
I wanted to make bread using natsumikan that wasn't overly zesty, and this is what I came up with.I used homemade marmalade that isn't too sweet. Adjust the jam to your liking!Cake flour gives the bread a cake-like texture. Use margarine instead of butter if you want to emphasize the citrus taste.I added sour yogurt, which goes well with jam but use milk instead if you prefer! Recipe by yuko&martin
