Ingredients

6 mini loafs
  1. 1 packagepitted dates, 8 oz
  2. 2 cupssugar
  3. 2 cupboiling water
  4. 2 Tbsbutter
  5. 2eggs
  6. 2 tspbaking soda
  7. 2 tspbaking soda
  8. 2 tspvanilla
  9. 1 tspsalt
  10. 4 cupssifted flour
  11. 1 cupchopped walnuts
  12. Nonstick cooking spray
  13. 6-15 ozempty, clean aluminum cans or mini loaf pans
  14. Optional: Whipped cream cheese or softened butter

Cooking Instructions

    In a mixing bowl, add dates, baking soda and boiling water to soften. Let stand until you can touch.

    Add all other ingredients, except nuts, and mix together with a spoon. Mix in nuts last.

    Spray cans with nonstick spray. Split the batter evenly over 6 cans, filling 2/3 full. Bake at 350 degrees for 50 minutes. Let cool and the loaves will pop right out! Have the butter or whipped cream ready!

This is the same as the date & nut bread my mom made. (I went to my cookbook to check lol. I'm 79, so it's been awhile.) So delicious!
