This has always been my favorite way to use ripe bananas. You can also freeze ripe bananas and use for this recipe at a later time. Yummy.
Cooking Instructions
- 1
Preheat oven to 375 degrees
- 2
In mixing bowl add bananas. Mash until fluffy
- 3
Add melted butter, eggs, and vanilla. Mix well with bananas.
- 4
Add flour, baking soda, and salt. Mix well.
- 5
Add nuts. Optional: leave nuts out if desired.
- 6
Spray loaf pan with cooking spray. Pour mixture into loaf pan.
- 7
Bake at 375 for 1 hour. Stick toothpick in middle to make sure it comes out clean and done.
- 8
Remove from loaf pan. Slice and Serve warm. Can have melted butter over each slice if you dare. Enjoy.

I usually double this recipe, making 1 loaf and 1 batch of muffins. The recipe is very versatile. You can add more banana if you'd like to increase the banana flavor. I have also made it with add-ins (choc. chips, dried cranberries, chopped walnuts). Stir in after flour.
