My medium saucepan wasn't big enough for all the ingredients,so had too cook a Second batch afterwards.Is a Recipe from a soup Cookery Book that I have,I used Maris Piper Potatoes instead of Sweet Potatoes,at the end of the soup process can add finely chopped deseeded Chillies,unless you wish to keep a few Chilli Seeds inside,could be very hot with the seeds left in.

Ingredients

25 or 50 min.
4 people
  1. 4small red onions,or 6 in a Pack
  2. 4medium carrots,chopped
  3. 4Parsnips,chopped
  4. 4Maris Piper Potatoes,chopped
  5. 4Leeks,chopped
  6. 2red Chillies (optional)
  7. 1.400 mlto 2.000ml Vegetable Stock
  8. 4 tbsp.Olive Oil
  9. About 1 tbsp. Sea Salt
  10. About 1 tbsp. Black Peppercorns

Cooking Instructions

25 or 50 min.

    Heat the olive oil in a large saucepan.

    Add the vegetables (onion,carrots,parsnip,leek,potato) and cook for about 5 minutes.

    Add the Vegetable Stock water and bring to the boil.Cover and cook for a further 20 minutes.

    Allow to cool to room temperature.

    Pour contents of saucepan into your blender and blend for about 30 seconds until completely smooth.Add more stock or hot water if required.

    Pour contents back in to the saucepan and add the chilli.Alter the consistency with a little stock or hot water if desired.Season with salt and pepper if required.

    Simmer for 10 minutes and serve.

My ingredient quantities,have led to a full Kenwood Mixing Bowl of Vegetable soup - I stored it all in 3 containers with lids - my 2 Nutri Ninja Blender Cup's with their lids and a fairly big rectangular Plastic Container with it's lid - this One I put in the Freezer.The black specks in the Vegetable soup is due to the blitzed Black Peppercorns within the soup - is important too crush in a Pestle and Mortar for stocks and chunky soups and can blitz in a Blender if making a blended soup.The soup when blended was very thick - for the portion of soup (400ml) ,smallest of my Nutri Ninja Cups - I added 100ml of cold water too thin out the soup a little.Peppercorns usually give more flavour than the Ground Black Pepper,is possible too put Ground Black Pepper into dishes and not be able to taste
