I don’t like oatmeal for my breakfast at all, but turning oats into delicious and healthy muffins are always my thing. If you are into grab and go breakfast, this recipe is just for you!

Ingredients

6 servings
  1. Rolled oats - 1 cup
  2. Ripe banana - 1/2 cup (mashed)
  3. 1Egg
  4. Flour - 2 tbsp
  5. Milk - 1/2 cup
  6. Baking powder - 1 tsp
  7. Cinnamon powder - 1 tsp
  8. Sugar - 1 tbsp (depending on the sweetness of your bananas, you may not need sugar at all)
  9. Chopped cashews (optional)- a handful (using almonds will be better I guess)
  10. Vanilla essence - 1 tsp
  11. Salt - a pinch
  12. Chocolate chips - for garnishing on top
  13. Peanut butter (optional) - for drizzle

Cooking Instructions

    Mix all the dry ingredients (oats, flour, Baking powder, cinnamon powder, sugar, salt) in a bowl and the wet ingredients (egg, milk, mashed banana, vanilla essence) in another bowl.Then mix all the ingredients together.

    Spray some oil in a large muffin pan and put the batter. Top with some chocolate chips. Preheat the oven at 180’C and bake them for around 20 minutes. Drizzle some peanut butter and serve when the muffins are still warm. It will give you a great cozy feelings! Enjoy!
