These crispy cookies are egg and dairy-free. I've been baking them for my kid's snacks.

Cooking Instructions

Grate the carrot.
- 2
Put the cake flour, katakuriko and beet sugar in a bowl and mix.
- 3
Add the grated carrot and canola oil and mix with a cutting mortion. Do not knead the mixture.

Press the mixture together into a ball, place on the kitchen bench top. Roll it thinly and cut off rectangle shapes with a knife, or you can cut out with cookie cutters.

Bake in a preheated oven at 190°C for 15 minutes.

I based these on a black sesame cookie recipe from an egg, butter, milk, and sugar-free recipe book. The original recipe called for whole wheat flour and katakuriko, but I didn't have enough whole wheat flour, so I blended it with cake flour. I also added more maple syrup and left out the sesame seeds.You can change the ratio of cake flour and whole wheat flour, if you like.
