  2. as needed caper sauce
  3. as neededcapers
  4. as neededonion, finely chopped
  5. as neededgreen olives
  6. as neededbéchamel sauce or cream
  7. as neededorange zest
  8. as neededcrispy sweet potato
  9. as neededbraised green beans
  10. as neededcherry tomatoes dressed with white wine reduction
  11. as neededgrape oil
  12. as neededsalt
  13. as neededpepper
  14. as neededlemon juice
  15. as neededoregano
  16. as neededbutter

Cooking Instructions

    Marinate the salmon for 10 minutes in grape oil with salt, pepper, and a touch of lemon juice.

    Peel the sweet potato and bake at 265°F (130°C) for 10 minutes.

    Trim the green beans and sauté them with a little butter, seasoning to taste.

    Chop capers, onion, and green olives finely, and sauté together until they turn a light golden color. Add béchamel sauce or cream, bring to a boil, and add orange zest.

    Sear the salmon on all sides on a griddle and finish cooking in the oven for 5 minutes. Then, plate all the ingredients.
