Celeriac Soup

I saw this in a recipe list for dishes that could be easily made and with only simple ingredients. I added some coriander and this is how I remember making it.

It's plenty delicious without the coriander (or with parsley), but adding it gives it a nice taste and even more flavor. (Recipe by Hoguni)

Ingredients

  1. 1medium celeriac
  2. 1onion, cut any way you like
  3. 2slices bacon, roughly chopped
  4. 15 gbutter (1 Tbsp)
  5. 2 Tbspwhole grain mustard
  6. 2sprigs thyme (fresh if possible)
  7. Coriander or parsley
  8. Water
  9. Salt and pepper

Cooking Instructions

    Melt the butter in a pot and cook the onions on low heat. Once the onions become translucent, add the bacon and continue cooking.

    Cut the celeriac into bite-sized pieces and add to the pot together with enough water to completely cover everything. Cook until softened and add the thyme.

    Once the celeriac has cooked, mix in the whole grain mustard and stop the heat. Allow to cool.

    Once it's cooled a bit, add the coriander or parsley, and blend it in a blender. If it's a bit thick here adjust it by adding a little water.

    Reheat before eating and enjoy.
