Easy Milk and Egg-free Oatmeal Pudding

I read online that oatmeal contains a lot of water-soluble dietary fibre, so tried eating cold porridge made from oatmeal, and figured if I put it in a mould I could make it into a pudding.

When chilled, the starches become resistant, which is good for both your digestion and weight loss. It's subtly sweet, so add some more sweetener if you have a sweet tooth. Recipe by Sangojunasu

Ingredients

3 servings
  1. 30 gramsOatmeal
  2. 1 tbspupwards Beet sugar
  3. 450 mlWater
  4. 1 pinchSalt
  5. 1Fruit or other garnish

Cooking Instructions

    Add the oatmeal, beet sugar, salt and water to a saucepan, and simmer until it becomes paste-like.

  2. 2

    When cooled, pour it into a mould and let it chill and harden in the fridge.

  3. 3

    Remove it from the mould and top with fruit, or other garnish of your choice.

  4. 4

    The top photo is served with banana and shio-koji pickled tofu. It was kind of like a cheesecake, and really delicious.
