Ingredients

  1. 2 cupurad dal
  2. 2onion
  3. 2tomatoes
  4. as neededFew curry leaves
  5. 1 cupboiled cooked tuver dal
  6. 2 tspred chilli powder
  7. 3 tspsambar masala
  8. 1/2 tsp fenugreek seeds
  9. 1 tspturmeric
  10. as requiredOil
  11. as per tasteSalt
  12. as per needJaggery
  13. as requiredKokam or tamarind water

    Soak urad dal in water for 2 hrs. Drain the water and grind urad dal in mixer. Don't add water or add very little water while grinding. Add salt, asafoitida in urad dal mixture.

    Boil tuver dal in cooker. In vessel add oil. When it become hot add fenugreek seeds, asafoitida, curry leaves onion and tomato. Add turmeric, red chilli powder, sambar masala & saute for 5 -7 min. You can add boiled drumstick or pumpkin at this stage

    When all vegetables cooked add boiled tuver dal in it. Add water as required. Then add salt, sambar masala, tamarind or kokam, red chilli powder, jaggery. Let Boil sambar for about 10 - 15 min. Add coriander.

    Take kadhai add sufficiant oil for deep frying medu vada. For medu vada put your hand in water then take vada batter in hand with thumb make hole in middle and put vada in oil for frying. Fry vada till golden brown.

    Serve medu vada sambar with chutney.
