Cooking Instructions
- 1
In a bowl add sliced onion, capsicum, cabbage and 1/2tsp salt, mix well and keep it aside for 5-7 minutes.
After 7 minutes squeeze he liquid from vegetable as much as possible. (This is a important process to make bhajia crispy)
Adding capsicum and cabbage is optional. - 2
Further, add besan, turmeric, carom seeds and salt (carefully while adding salt, as we already 1/2tsp salt earlier).
In my family my kids don't like chilli, that's why I use whole chilli but if you like you can add chilli paste in this stage.
Combined everything well, add more besan if required. Do not add extra water. - 3
Heat oil in a kadhai. Keep the flame on medium. Once oil heat add bhajia, no require to make any proper shape.
Fry till golden brown and crispy.
Bhajia is ready, similarly make all kanda bhajia. - 4

Phodshi Kolambi Chi Bhaji (Grassy Leafy Veg And Shrimp Fritters) Phodshi Kolambi Chi Bhaji (Grassy Leafy Veg And Shrimp Fritters)
#deepfriedPhodshi Kolambi Chi Bhaji are fritters made from shrimps and monsoon special leafy vegetable called Phodshi. This vegetable resembles grass and hence is even called as Gavat (Grass) in the Marathi language. It has a small white part at the bottom, which if desired can be discarded, but it is advisable to use it as it's equally nutritious!Certain leafy vegetables are available in the first few weeks of monsoon and are generally found in Maharashtra, in the far suburbs of Mumbai. One such vegetable is phodshi. It is used to prepare a stir fry vegetable, cutlets and even Phodshiche Thalipeeth. Two years back I had come across an article in the newspaper about a particular Maharashtrian community making these phodshi and shrimp fritters. Though I couldn’t find the exact recipe for it, I tried making these using the basic ingredients of a bhaji (fritters made using chickpea flour). And the result was totally delicious and crispy fritters! Pooja M. Pandit -
