Easy Spinach and Mashed Tofu Salad with Aromatic Sesame Seeds

This recipe is a part of my easy healthy food project!
I'm experimenting with staple side dishes that have lots of vegetables with as little oil and sweet ingredients as possible.

Since it's a healthy dish, the seasoning is a little on the lighter side. The sesame seeds are aromatic so it doesn't bother me that much. If it's not enough, add miso and soy sauce, and adjust the taste to your liking. Recipe by chibirock

Ingredients

3 servings
  1. 1 bunchSpinach
  2. 1 mediumCarrot
  3. 3Shiitake mushrooms
  4. 1/2 blockKonnyaku
  5. 150 gramsTofu
  6. 2 tbspSesame seeds (white or black)
  7. 1 tbsp★Miso
  8. 1 tbsp★Honey (or sugar)
  9. 1 tbsp★Soy sauce

Cooking Instructions

  1. 1

    Remove the roots of the spinach, and wash well. Wrap with plastic wrap, and microwave for 2-3 minutes, then soak in water. Strain away the excess water, and cut into 3 cm lengths.

    Wash the konnyaku, and julienne the carrot, shiitake mushrooms, and konnyaku. Arrange in a heatproof dish, and microwave for 2 minutes without plastic wrap.

    Roast the sesame seeds in a frying pan for 2-3 minutes without burning them. Coarsely grind them.

    Put lightly drained tofu, roasted sesame seeds, and the ★ ingredients into a bowl, and mix well.

    Add the spinach, carrot, shiitake mushrooms, and konnyaku to Step 4, then mix.
