Ingredients

2-4 servings
  1. 2-3pattypan squash roughly chopped
  2. 1small onion chopped
  3. 1 clovegarlic minced
  4. kernels from 2 corn cobs
  5. 1 Tablespoonolive oil
  6. Salt to taste
  7. 2 Tablespoonssumac (more or less to taste)
  8. 4 Tablespoonsvegetable stock
  9. Fresh herbs to taste (I used a half dozen minced basil leaves)
  10. 1pat butter

Cooking Instructions

    Prep vegetables

  2. 2

    Over a low fire, soften onion & garlic in olive oil until it is transparent

  3. 3

    Stir in corn kernels & squash, turning fire up to medium low

  4. 4

    Add stock & 1 pinch salt

  5. 5

    Cover and cook until squash is tender, about 10 minutes

  6. 6

    Add sumac & taste for salt

  7. 7

    Add butter & stir

  8. 8

    Turn off fire, cover & let rest for a few minutes

  9. 9

    Sprinkle each serving with fresh herb

  10. 10

    Enjoy!
