I made these muffins because I wanted to use up a ripe banana.

Ingredients

  1. 130 gramsCake flour
  2. 60 gramsUnsalted butter
  3. 80 gramsSugar
  4. 1Egg
  5. 2 tbspSoy milk
  6. 1Banana
  7. 1/2 tspCinnamon
  8. 5 gramsBaking powder
  9. 1Chocolate chips

Cooking Instructions

    Cream the room temperature butter and sugar with a whisk until pale and fluffy.

    Combine the beaten egg and soy milk in advance, and add the mixture little by little while mixing.

    Mash the banana with a fork, add to the bowl, and mix.

    Add the chocolate chips, and fold in with a cutting motion with a spatula.

    Sift the cake flour, cinnamon, and baking powder into the bowl.

    Fill the paper cups with the batter about 1/2 full using a spoon. Sprinkle with chocolate chips.

    Bake in the oven preheated to 180℃ for 30 minutes, and it's done.

    Wrap them, and give them away as Valentine's Day gifts.
