Kimchi Jjigae Stewed Udon

I had some kimchi in my fridge. I like stir-fried udon noodles with kimchi but this time I felt like preparing jjigae-style stewed noodles.

Use the kimchi and its pickling brine too. It cooks through easily in residual heat in a clay pot so after covering with a lid, stop heating quickly. You can cook the egg to your liking but I like the eggs to be soft-set. Recipe by Bananazakuro

Ingredients

1 serving
  1. 1portion Frozen udon noodles
  2. 100 gramsKimchi
  3. 80 gramsThinly sliced pork
  4. 1/2 bunchChinese garlic chives
  5. 1Egg
  6. 500 mlWater
  7. 1biggish clove Garlic
  8. 1 tsp★Chinese chicken stock powder
  9. 1 tbsp★ Miso
  10. 1 tbsp★Gochujang

Cooking Instructions

    Cook the frozen udon noodles. Grate the garlic. Cut the pork into bite sizes. Cut the garlic chives into about 5 cm lengths.

    Pour water in a clay pot. Bring to the boil and add the grated garlic and the ★ ingredients. Mix well and add the pork. After the pork is cooked through add the udon noodles and kimchi. Stir gently.

    Add the garlic chives and egg to 2. Cover and cook until the egg is soft-cooked.
