Today while surfing facebook one of my Venus sisters posted a Delish video for jalapeño popper chicken. This is my spin on it. The MFP info will be for 2 roll ups but I ended up only eating 1 which was plenty. This was really flavorful and satisfying

Ingredients

  1. 3 tbspsoftened low fat cream cheese
  2. 2chicken breast cutlets (6oz)
  3. 1/2 ouncefresh spinach thinly sliced
  4. 1/2 ouncejalapeño pepper chopped
  5. 1/2 ouncered bell pepper chopped
  6. 1 tspgarlic powder
  7. 1 tsponion powder
  8. 1/2serving (14g) of reduced fat cheddar jack
  9. 2 stripsregular sliced bacon

Cooking Instructions

    Place chicken cutlet in a bag and thin it out with the flat side of a meat tenderizer

  2. 2

    Chop up your veggies

  3. 3

    Combine your softened cream cheese with powdered garlic and onion

  4. 4

    Add veggies in and stir if you uses kitchen scale you can weigh them as you add in 1/2 ounce of each

  5. 5

    Divide the filling between each chicken breast and roll up

  6. 6

    Wrap each roll up in a piece of bacon

  7. 7

    Place side by side in a 6 inch skillet

  8. 8

    Top with cheese cover with foil and bake in a 375 degree oven for 45. Remove foil the last 15 minutes of cooktime

    To go along with my spicy chicken I choose a serving of frozen fire roasted corn and cauliflower rice that I added Queso dip and red 🌶
