Cooking Instructions
- 1
Place all ingredients in order as listed in a blender and blend until smooth, about 1 minute or 2. Scrape the sides and blend again briefly until batter is lump-free.
- 2
Place nonstick or cast iron skillet over medium heat. Melt a little butter or oil in the pan and coat. Slowly pour crepe batter into the centre of the pan, tilting the skillet around to spread the batter evenly across to form a very thin layer.
- 3
After 15-20 seconds, flip it over and cook another 10 seconds or so. Remove from pan and repeat this process until no more batter remains.
- 4
Serve immediately with whatever toppings you desire.

From Jean Pare's Rookie Cookbook, the first adult cookbook I was given in my teens. This one is a winner with my son and nephew. It's quick and simple, and is delicious with just syrup or fruit and whipped cream. Once I even put leftover ribs and BBQ sauce on it.Kit

Mille Crepe Cake Mille Crepe Cake
Ah, yes, the mille crepe. Another notoriously expensive to buy and time-consuming to make, but unbelievably delicious French dessert. The mille crepe is not as complicated as the macaron, but unlike the macaron, it's not a let's-make-this-for-breakfast-tommorrow project, but rather a I-need-something-for-next-week's-fancy-potluck kind of cake. Moist Chewy Crepes Moist Chewy Crepes
I've always loved crepes and often made it without giving much thought to the ratio of ingredients, but this time, I measured them out well. Because these crepes are so simple and yet easy to handle, I decided to post the recipe here!Take care to strain the batter to remove lumps - this really makes a difference. There's no need to grease the pan if it's a non-stick frying pan. Make sure to heat the frying pan well. It's a simple taste, so you could make a meal with it for sure. Apple Pie Crepe Cupcake...things Apple Pie Crepe Cupcake...things
Okay so not gonna lie I had no idea this was going to work and I can't think of any kind of fancy name for this (if it hasn't been done already). Anyway, I tried out a recipe that was supposed to be "quick" and "easy" and "my daughter loved it" and I realized whoever told you making crepes was easy was a dirty communist because I couldn't get it right. Well, I ditched the recipe and used my own experience in the culinary arts to create what eventually became this. It was a cold night in Florida--good luck!! :) zoey9015
