Carrot Salad with Grapefruit and Tomato

Carrots are great for your health and boost the immune system. Grapefruit helps relieve stress and prevents your skin from ageing. Tomatoes use anti-oxidation to help with anti-aging. I made this fruity and easy to eat carrot salad with a combination of ingredients that ladies will love.

This garlic paste doesn't leave any after smell so it's very useful to have for cooking. Of course you can also use regular grated or tubed garlic. Recipe by tink

Ingredients

  1. 1 smallCarrot (julienned)
  2. 1/2 smallGrapefruit
  3. 1/2 mediumTomato
  4. 1 1/2 tbsp●Extra virgin olive oil
  5. 1 tsp●Grainy mustard
  6. 1 tsp●Wine vinegar (I used raspberry flavored)
  7. 1 dash●Garlic paste
  8. 1 pinchKrazy Salt
  9. 1 pinchBlack pepper

Cooking Instructions

    This is the garlic paste that I used. Since it's cooked and then soaked in oil, the best feature is that it doesn't smell. So because of that, this salad can be eaten in the morning too.

    Cut the carrot into 4 cm long strips. Sprinkle with salt and let sit for 5 minutes until softened. Wring out the moisture before using.

    Peel the grapefruit and remove each section. Chop the tomato into bite-sized pieces.

    Combine the ● ingredients in a bowl. Add the carrot. Tear apart and add half of the grapefruit (the juice too). Also add the tomato.

    Taste and season with black pepper as needed. Pile it up onto a plate.
