Easy Consomme Soup with Crunchy Lettuce

I love the texture of fresh lettuce, so wanted to try using it in a soup.

Turning off the heat before adding the lettuce ensures that it maintains its crunchy texture. This is great with soy sauce or grated cheese added. I've heard from other users that have tried adding extra ingredients, such as enoki mushrooms, corn, tofu and eggs. Recipe by Yuminyamu

Ingredients

3 servings
  1. 4leaves Lettuce
  2. 2Wiener sausages (or bacon or ham)
  3. 2Consomme soup stock cubes
  4. 700 mlWater
  5. 1 smallamount Salt and pepper

Cooking Instructions

  1. 1

    Wash the lettuce and cut roughly or tear into pieces. Slice the wiener sausages diagonally.

  2. 2

    Dissolve the consomme cubes in water. Add the wiener sausages and cook for about 3 minutes. Season with salt and pepper.

  3. 3

    Turn off the heat and add the lettuce, and it's done!
