Cooking Instructions

Step 1: Get three bowls. Pour the all purpose flour in one bowl, Pour the bread crumbs in the second bowl, Crack open the 2 eggs in the final bowl and whisk - Set this aside.

Step 2: Place the sausage in a medium sized bowl and add salt, pepper and seasoing. Mix thoroughly to combine, Then divide into 8 portions

Step 3: Open up the plastic bag and place one portion of sausage meat. Close the plastic bag and roll out the sausage meat with the rolling pin.

Step 4: Place one hard boiled egg in the center of the flattened sausage and mold the sausage around the egg using the nylon into a round ball.

Step 5: Roll the wrapped egg in flour, then dip in the beaten egg and finally dip in the breadcrumbs and coat generously.

Step 6: Heat the cooking oil in a deep pan till very hot then gently lower the wrapped eggs into the oil. Leave to deep fry for about 7-10 minutes on one side, turn and do the same on the other side on low heat till golden brown while turning consistently.

Step 7: Remove the scotched eggs from the oil and drain on a paper towel. Leave to cool slightly then Serve!

I have head of these fabled delicacies but never attempted to make one until recently. It’s pretty straight forward. Soft boiled eggs, wrapped with sausage, breaded and fried. I used “Hot” 🙄 Italian sausage, because that’s what I had on hand. But, I personally think it would go better with the sweet Italian sausage with provolone and fennel in it. Karl -

I saw a post on reddit talking about these, had to try them out. Soft boiled eggs wrapped in italian sausage, breaded and fried. This is not an easy recipe to make, I went through six eggs before I had two that came out nicely done, so I put as many photos in as I could. Dan Flynn
