Pork and Peanut Noodles

This is another in a series of dinners that are relatively quick and easy to make. Besides being tasty, it’s an all-in-one meal that contains meat, veggies, and carbs. I dialed down the spice when I made it for my family, since my four-year-old can’t really eat spicy food. She was a big fan of this dish because of the peanut flavor and because of all the noodles! 🥜 🍜

Ingredients

~30 minutes
~10 servings
  1. Sauce
  2. 1/2 cupcreamy peanut butter
  3. 1/2 cupsoy sauce
  4. 4 Tablespoonsrice vinegar
  5. 2 Tablespoonswhite sugar
  6. Up to 4 teaspoons crushed red pepper
  7. 1and 1/2 cups water
  8. Meat Mixture
  9. 2 poundsground meat of your choice (I used 1 lb ground pork and 1 lb ground turkey)
  10. Olive oil or vegetable oil for frying the meat
  11. 1and 1/4 cups diced onion
  12. 1and 1/4 cups diced carrots
  13. 2 inchesginger, peeled and chopped very fine (or, if you prefer, you can slice it thinly into matchsticks)
  14. 4 clovesgarlic, minced
  15. ~12 oz noodles (rice noodles, or a thin pasta. I used fettuccine)
  16. Garnish (Optional) -Pick whichever you like
  17. Cilantro
  18. Chili-garlic sauce or Sriracha
  19. Chopped roasted peanuts
  20. Sliced green onions
  21. Lime juice

Cooking Instructions

    Combine the sauce ingredients (EXCEPT the water) in a bowl, and whisk well.

    In a frying pan, sauté the ground meat until no pink remains. Work in batches so the pan is not crowded and the meat can brown.

    Drain the excess grease/oil from the meat and set the meat aside. Wipe the pan out and sauté the onion and carrots until softened.

    Add the garlic and ginger (and red pepper, if desired) and sauté 2 to 3 minutes longer.

    Transfer the cooked veggies to a large pot, then stir in the cooked meat.

    Add the prepared sauce plus the water. Stir well until everything is coated. Heat until bubbly, then reduce heat and simmer for about 3 minutes or until the sauce thickens slightly.

    Taste, and season with salt and/or pepper to your taste.

    Cook the pasta or noodles according to the package directions.
    Transfer pasta to individual serving bowls and ladle pork mixture over the noodles. Garnish as desired.
