Thai-Style Stir-Fried Udon Noodles

I made some stir fried udon when I was visiting friends in Bangkok. They were out of soy sauce so I tried using Thai fish sauce instead. Although people in Bangkok use limes, lemon is a fine substitute.
Now I'm very fond of stir fried udon with nam pla.

Microwave the udon noodles briefly to warm them up, and untangle them in advance. If you are using frozen noodles, rinse them in water to get rid of any surface stickiness.
If you add some fresh coriander, it will taste more like Thai cooking!

Ingredients

1 serving
  1. 1pack Udon noodles
  2. 60 gramsThinly sliced pork belly
  3. 1/2a small onion Onion or green onion
  4. 5Cherry tomatoes
  5. 5to 10 cm Chinese chives
  6. 1/2 pieceGinger, finely minced
  7. 1/2 cloveGarlic, finely minced
  8. 1Fish sauce
  9. 1from 1/4 of a lemon Lemon juice

Cooking Instructions

    Cut the bag the udon noodles are packed in a little bit, and microwave for 30 seconds. Then, place the noodles in a sieve and rinse under running water to remove any surface stickiness.

    Heat some oil in a frying pan and stir-fry the garlic and ginger until they are fragrant. Add the pork and season lightly with salt and pepper.

    When the pork is cooked, add the thinly sliced onion and stir fry until it's transparent. Add the cherry tomatoes.

    Add the chives and udon noodles and stir fry. Add the fish sauce and lemon to finish.
