Easy Shawarma Corn Chowder in Insta pot Duo 6 qt with side of frozen fried taquitos

Ingredients

  1. 2small red potatoes chopped bite size
  2. 2 stalkscelery (hearts are best)chopped
  3. HalfVidalia onion chopped
  4. 5baby carrots chopped
  5. 4 slicesHormel precooked bacon
  6. Halfa red yellow or orange Bell pepper chopped
  7. 1yellow squash cut up bite size
  8. Sprinkle of shawarma seasoning to taste
  9. 1 cupchicken stock or 1 cube bouillon
  10. 1 cancorn un -drained
  11. soup thickner
  12. 2 tspbutter
  13. 2 tspflour
  14. 1/2 cupheavy cream
  15. 1/2 cupMexican 4 cheese (Publix brand)
  16. Salt pepper to taste
  17. Taquitos store bought frozen
  18. 6El Monterey frozen chicken cheese taquitos

Cooking Instructions

30 minutes
  1. 1

    Turn insta pot on to saute set for 9 minutes

  2. 2

    Add cut bacon veggies and spices to pot sweat for 9 minutes

  3. 3

    Add chicken stock

  4. 4

    Cover insta pot, pressure cook for 6 minutes

  5. 5

    Open a can of corn with juice set aside

  6. 6

    Release the steam open pot and add a can of corn with liquid

  7. 7

    Pressure cook for 3 minutes* while this is cooking, make Soup THICKNER in a separate pan

  8. 8

    In a separate sauce pan add flour butter to sauce pan, make a roux add 1/2 cup of cream and the 1/2 cup of cheese whisk till smooth

    When insta pot is finished Add roux cheese mix to the insta pot stir well.

    Pressure cook 1 more minute or just bring to a boil and, serve

    Fry cook taquitos to package directions
