Presenting soft and fluffy Idlis, Idli is a combo of Rice and Urad Dal and Sambar is also prepared from Dal and that is Toor Dal along with vegetables.

Ingredients

4-5 servings
  1. 1 cupUrad Dal
  2. 2 cupRice
  3. Salt as required
  4. Oil for greasing
  5. Water as required
  6. Sambar
  7. as required Onion, tomato, potato, carrot, green chilli, papaya, ash gourd, pumpkin
  8. 1/4 cupToor Dal
  9. 1/2 tspTurmeric powder
  10. 1 tspMustard seeds
  11. 1 tbspSambar masala
  12. 1/2 tspred chilli powder
  13. 3green chilli
  14. 1dry red chilli
  15. 1/4 tspHing
  16. 1/2 cupTamarind pulp
  17. 2 tbspOil
  18. Salt as required
  19. 1small bunch Curry leaves

Cooking Instructions

    Soak Dal + rice for 5-6 hours, grind into smooth paste by adding little little water. Keep overnight for fermentation.

    After fermentation, add salt and whisk properly, add water as per requirement. Grease moulds and put steamer to flame by adding sufficient water. Allow to form steam.

    Add Idli batter on each greased moulds and put inside steamer and steam for 8 - 10 minutes.

    Let it cool for few minutes and then de mould. Idli is ready.

    Par boil carrot + potato + pumpkin + ash gourd + papaya and keep aside. Assemble all other ingredients. Pressure cook Toor Dal and keep aside.

    In pan add oil, let it heat, add mustard seeds and allow to crackle. Then add dry red chilli + curry leaves + hing and sauté for few seconds. Then add onion and sauté for few minutes til onion is golden yellow. Then add tomato + green chilli + turmeric + red chilli powder and sauté for few minutes, then add all boiled veggies + tamarind pulp + salt + SAMBAR Masala and boiled Dal and give a nice mix, cook for few minutes and SAMBAR is ready to serve.
    Add more water as per gravy preference.

    Serve hot hot Idli with Sambar.
