Cucumber and Chicken Sweet and Sour Stir-fry

Simply stir fry cucumber with inexpensive chicken tenders for an addictive and delicious dish with crunchy cucumber and tasty chicken.

The key is to finish it off at high heat once you add the sauce ingredients. It won't be thick to start with, but the katakuriko on the chicken will gradually dissolve to create a nice smooth sweet and sour sticky sauce. For 2 servings. Recipe by FarmersK

Ingredients

2 servings
  1. 2Chicken tenders
  2. 2 smallCucumbers
  3. 1 1/2 tbspKatakuriko
  4. 1Salt and pepper
  5. [A]
  6. 50 mlWater or Chinese soup
  7. 50 mlVinegar
  8. 1 1/2 tbspSugar
  9. 1 tbspKetchup
  10. 1 tbspTonkatsu sauce (Japanese-style Worcestershire sauce or steak sauce)
  11. 1 pinchSalt

Cooking Instructions

    Slice the chicken tenders diagonally into thin strips and season lightly with salt and pepper. It's easiest to slice partially defrosted tenders.

    Cut off both ends of the cucumbers and chop roughly into thin long pieces.

  3. 3

    After 3 minutes, when the sauce thickens from the katakuriko coated on the chicken like the photo, it's done.

    Heat 1 tablespoon of sesame oil in a pan over medium heat, and add the chicken tenders. Spread out the pieces and fry.

    Lightly fry both sides, add the cucumbers and stir fry for about 1 minute.

    Turn up the heat to high, and add the ingredients listed under [A] (water or soup stock, vinegar, sugar, ketchup, tonkatsu sauce and salt). Stir fry for 3 minutes while shaking the pan, being careful not to let the sauce burn.

    After 3 minutes, when the sauce thickens from the katakuriko coated on the chicken like the photo above, it's done.
