Clear Soup with Tofu and Enoki Mushrooms

This soup make you make you fall in love with simple traditional Japanese cooking. This is the regular soup we have when we have grilled fish.

I don't really take the time to drain my tofu properly, so the extra water from the tofu ends up thinning out the soup so the saltiness is just right. Adjust the seasonings to your taste. For 4 servings. Recipe by Pukuttopukumaru

Ingredients

4 servings
  1. 1 blockTofu
  2. 1pack Enoki mushrooms
  3. 4 cupDashi stock
  4. 3 tbsp※ Sake
  5. 1 tbspMirin
  6. 1/2to 1 teaspoon ※ Salt
  7. 2 tbsp※ Usukuchi soy sauce
  8. 1to garnish Green onion

Cooking Instructions

  1. 1

    Cut the enoki mushrooms into 3 even lengths, and shred apart. Cut the tofu into 2 cm cubes.

  2. 2

    Bring the dashi stock to a boil and add the ※ ingredients. Add the enoki mushrooms and tofu and bring to a gentle simmer again.

  3. 3

    Serve in bowls scattered with some chopped green onion.
