Ingredients

  1. 2chicken breasts
  2. 4 Tbsgrated Parmesan cheese, divided
  3. 1 TbsTony’s Creole seasoning
  4. 1 tspsalt free garlic & herb seasoning
  5. 1 tspsmoked paprika
  6. Salt & pepper to taste
  7. 1-2 cupspanko bread crumbs (I used unseasoned)
  8. 1 TbsItalian seasoning
  9. Oil for frying
  10. 2-3 TbsDijon mustard or spicy brown mustard

Cooking Instructions

    Trim any large fat pieces of chicken, cut in half or in thirds. Season chicken with everything up to (salt & pepper) but add black pepper. Place in a bowl and mustard and half of Parmesan cheese, mix.

    Put oil to warm, over medium heat- medium high heat, test oil with water or flour to check if it’s ready. Set up a plate with bread crumbs, Italian seasoning, rest of Parmesan cheese & pepper if desired. Take chicken out and dredge in mixture, one piece at a time and place on a plate. Once oil is hot, place chicken in oil & cook until done.

    Place on cooling rack or on a paper towel lined plate. Enjoy!
