Cheddar Olive Bread

This bread is so amazingly delicious!

Ingredients

  1. 2 1/2 cupsall-purpose flour
  2. 2 tbspsugar
  3. 2 tspbaking powder
  4. 1 tspdry mustard
  5. 1/2 tspbaking soda
  6. 1/2 tspsalt
  7. 1/4 tspcayenne pepper
  8. 1/4 cupbutter
  9. 4 ozshredded Cheddar cheese
  10. 1 cupButtermilk
  11. 1 tspworcestershire sauce
  12. 1egg
  13. 1 cupsliced olives
  14. 3/4 cupdrained canned corn

Cooking Instructions

45-55 minutes

    Preheat oven to 375 degrees. Spray 9x5 loaf pan with nonstick cooking spray.

    Sift flour, sugar, baking powder, dry mustard, baking soda, salt, & cayenne into large mixing bowl & mix well.

    Cut in butter with a pastry blender or in stand mixer on low until mixture is crumbly.

    Add cheddar to flour mixture & mix well. Make a well in center of flour mixture.

    In a small bowl, whisk together Buttermilk, worcestershire sauce, & eggs until blended. Pour into well. Stir just until moistened. Stir in olives & corn.

    Pour batter into prepared loaf pan. Bake until a toothpick inserted in center comes out clean, about 45-55 minutes. Cool bread in pan for 5-10 minutes. Remove to wire rack to cool completely. Slice & serve. Store leftovers in fridge.

    Note: to make your own Buttermilk, put 1 tbsp of lemon juice or white vinegar in a 1 cup liquid measuring cup. Add enough milk to make 1 cup. Stir. Let set for 2 minutes & it's ready to go. You can use whatever milk you like. I used soy. It's an easy way to make that dairy free or if you don't have Buttermilk on hand.
